Abstract

ABSTRAK Sapi potong dalam masyarakat Indonesia mempunyai peran yang cukup banyak, antara lain sebagai penghasil daging, sumber lapangan pekerjaan maupun sebagai tabungan. Tingginya tingkat permintaan daging yang tidak sesuai dengan laju peningkatan produksi menyebabkan ketersediaan daging dalam negeri tidak mampu memenuhi kebutuhan. Salah satu faktor yang memengaruhi ketersediaan daging yaitu dilakukannya pemotongan sapi betina produktif. Tujuan penelitian ini untuk mengetahui rataan umur sapi betina yang disembelih di rumah pemotongan hewan pemerintah dan swasta serta mengetahui manakah yang memiliki persentase pemotongan betina produktif paling tinggi. Penelitian ini menggunakan masingmasing 50 sampel mandibula sapi bali betina dari RPH Negeri dan RPH Swasta di Banjar Bersih Darmasaba. Pengamatan dilakukan berupa pendugaan umur sapi betina yang dilihat berdasarkan waktu erupsi gigi sapi tersebut. Hasil penelitian menunjukan rataan umur sapi betina yang dipotong di RPH Negeri yaitu umur 1,5-2,0 tahun (10%); 2,5-3,0 tahun (4%); 3-4 tahun (46%); 5 tahun (36%); 7 tahun (2%); 9 tahun (2%) sedangkan pada RPH Swasta di Banjar Bersih Darmasaba yaitu umur <1,5 tahun (10%); 1,5-2,0 tahun (22%); 2,0-2,5 tahun (20%); 2,5-3,0 tahun (12%); 3-4 tahun (24%); 5 tahun (12%). Simpulan yang dapat ditarik bahwa persentase pemotongan sapi bali betina produktif lebih tinggi pada RPH swasta (100%) dibandingkan RPH yang unit pelaksanaannya oleh pemerintah (98%). ABSTRACT Beef cattles have very important role for Indonesian peoples, either as meat producer, source of employment, or as personal savings. The high level of meat requirements were not followed by the increasing of meats producing rates, so it has caused the avai lability of meat in Indonesia was not able to meat the needs of whole community. One of the factor that influenced the availability of meat is the slaughtering of productive cows. The purpose of this study were to determine the average age of cows that were slaughtered in abattoirs and know to which abattoirs that have highest percentages in slaughtering productive cows. This study used 50 samples of cows mandibule taken from Negeri and Banjar Bersih Darmasaba slaughter houses. The observation was done by predict the age of cows based on teeth eruption. The result showed that the average age of female cattle the slaughtered in abattoir by government were 1,5-2,0 years (10%); 2,5-3,0 years (4%); 3-4 years (46%); 5 years (36%); 7 years (2%); 9 years (2%). Where as in Banjar Bersih Darmasaba abattoir were <1,5 years (10%); 1,5-2,0 years (22%); 2-2,5 years (20%); 2,5-3,0 years (12%); 3-4 years (24%); 5 years (12%). The percentages of slaughtering of productive cows in privates slaughter houses is higher (100%) than in government slaughter houses (98%).
